This soup is perfect comfort food for cold days and nights!
Number of servings:
1 tablespoon olive oil
1 onion, roughly chopped
250 g Boks Bacon (Dry cured Streaky Bacon), chopped
1 small cauliflower, trimmed, cut into large florets
1 litre water
2 bay leaves
1/4 cup lite cream, optional
1/2 teaspoon horseradish cream
salt & pepper
1 tablespoon snipped chives
Heat the oil in a large heavy based saucepan. Sauté the onion and bacon for 5 minutes. Add the cauliflower, water and bay leaves and bring to the boil.
Reduce the heat to moderately low and simmer the soup for 15 minutes. Remove the saucepan from the heat, set aside to cool slightly. Remove the bay leaves and process the soup in a food processor in two or three batches until smooth.
Return the soup to a saucepan and warm gently, add cream and horseradish and season with the salt and pepper. Sprinkle with the chives and serve.
